Les Croques
A croque is essentially a grilled cheese as seen through a decadent French lens. Each variation is made with country bread, Gruyère cheese, béchamel, whole-grain mustard, and Herbes de Provence. The classic Croque Monsieur uses sliced ham, while the vegetarian Forestier features roasted wild mushrooms. During the day, each croque can be made into a Madame by adding a fried egg on top.
Béchamel sauce: butter, flour, milk, nutmeg.
Herbes de Provence: thyme, rosemary, savory, lavender, basil, marjoram, sage, fennel seeds.
