Carottes Râpées

 
 

The carottes râpées, a riff on a classic French salad, tosses freshly grated carrots with pistachios, an assertive lemon dressing, and coriander two ways – roughly crushed, toasted seeds and fresh cilantro, the plant that grows from coriander seeds. The carottes râpées are bright in both color and flavor, and have been a staple on the menu for years. Originally only served at dinner, guests requested the carrots so often that we now offer them at lunch and brunch as well.
