Tarte Tatin

 
 

Tarte Tatin has long been Buvette’s quintessential dessert. Invented by the Tatin sisters at their hotel south of Paris in the 1880’s (legend has it, by a lucky mistake), tarte Tatin is simple but sublime: Gala apples caramelized with sugar and their own juices, with puff pastry and a dollop of crème fraîche. Tarte Tatin is baked upside-down before being flipped and glazed. Passersby can often spot the tarte Tatin cooling near the front window – a kind of invitation to join us inside.
