Brandade de Morue
Brandade de Morue is a deeply satisfying combination of whipped salt cod and potatoes. It’s one of those dishes you can cook at home, but it’s really better to leave to the experts – curing and rehydrating the cod takes several days and no small amount of effort. After doing so, we chop the cod into pieces and mix it with potatoes, milk, cream, garlic, and olive oil. The result is a lush and flavorful spread, perfect with country bread. We serve the brandade in a jar with a stack of toast. (This can sometimes confuse guests, so be sure to explain when presenting to the table.)
