Cassoulet

 
 

Cassoulet is a rich stew of meats, vegetables and beans, simmered together for hours. Garlic pork sausage, lardons (fatty bacon), white beans, tomato, onion, rosemary, and thyme slow-cook on the stove. Just before serving, we tuck a crispy roasted duck leg into the cassoulet. As a quintessential Southern French dish, cassoulet pairs wonderfully with red wines from Rhône, Provence, and Languedoc-Roussillon.
