The Waffle Sandwich
The Waffle Sandwich started as an early morning family meal before brunch service. The staff enjoyed it so much that we eventually started serving the dish to guests off-menu. Word spread, and the requests came so often that now the Waffle Sandwich is a feature of our breakfast, lunch, and brunch menus.
After frying bacon until it just starts to crisp, we crack an egg in the pan directly on top of the bacon. When the egg is nearly cooked, it’s covered with Jack cheese. Then we transfer the bacon-egg-cheese stack in between a halved waffle. Drizzled with maple syrup, this is a perfect savory and sweet decadence.
