Tajine

 
 

Tajine is a North African/French stew of vegetables (or meat) and spices, named for the earthenware pot it is traditionally cooked in. Our tajine comes in a beautiful copper pot, topped with yogurt and cilantro. In spring and summer, we cook eggplant tajine; in fall and winter, we transition to butternut squash. For both, the base includes garlic, ginger, onions, ras el hanout spice blend, tomato, currants, almonds, and olives.
