Clafoutis

 
 

Clafoutis is a berry or banana tart which we often serve as a daytime special. The batter calls for heavy cream, milk, egg, flour, butter, vanilla, and whatever fruit is in season. We typically rotate between blackberry, cherry, and banana. Baked in a shallow dish without a crust and then dusted with powdered sugar, clafoutis is traditionally served lukewarm or at room temperature.

Clafoutis originally hails from the Limousin region in southwest-central France — the country’s most sparsely-populated area, known for cattle farming.
