Salade de Poulet
The Salade de Poulet is another dish that became so popular we started serving it beyond its original intent; in this case, at dinner as well as lunch and brunch. We use a mix of butter lettuce, endive, watercress, and sliced radish; classic roast chicken (both light and dark meat, skin-on); soft boiled potatoes and poached green beans. Everything is tossed with our whole-grain mustard and sherry vinaigrette – such a perfect lunch that some guests want it for dinner.
